Brik is a typical Tunisian snack. Fried pastry stuffed with a variety of fillings.

Tunisians make their own pastry.

Serves 4

• 4 eggs
• 4 " Brik " sheets
• 1 tin of tuna fish (200 g)
• 1 small onion
• 1 tbsp chopped parsley
• 1 tbsp lemon juice
• 1 tbsp olive oil
• Salt and pepper
• Olive oil for deep frying

 

Peel and finely chop the onion.

Drain the tuna fish and break down with a fork. Put 1 tbsp oil in a pan and fry the onion on medium heat until tender and almost transparent.

Drain off the oil, place the onion in a bowl and mix with the tuna meat, lemon juice, parsley and a little salt and pepper.

Divide the filling among the 4 sheets of " Brik ", form a well in the centres and break an egg in each.

Moisten the edges of the sheet, fold over in half, press lightly and fold once more to obtain a square pie.

Deep fry in hot oil two at a time, until golden. Take out, allow to drain and serve hot.
